A traditional Nigerian red stew comprised of tomatoes, onions, bell pepper, habanero and garlic, cooked down for 3-4 hours, and brought back to life with fresh chicken stock. It is reduced once again until the perfect consistency is reached. Once reached, the stew is finished with fresh herbs and spices. Served on top of white rice with chicken or beef, this a true Nigerian delicacy!
King Christopher Okoli was born to Frances and Charles Okoli in San Jose California. At an early age, Kings childhood was filled with the sights, sounds, smells and tastes of his Nigerian heritage and unbenounced to him, molded his culinary view and standpoint. The traditional Nigerian red stew was first taught to him by his mother, where she guided him on the basics of the stew, but it was his father who showed him the techniques to turn that traditional Nigerian stew into Un-Gwan-Gway "Fruit from the Earth". And with over 10 years of culinary arts experience, King is ready to apply the skills learned along his culinary journey to help elevate and share Un-Gwan-Gway "Fruit from the Earth" with the world.
